Creamy White Chicken Chili

1 lb boneless skinless chicken
1 med onion
1 1/2 tsp. garlic powder
1 TBS oil
2 cans great northern beans, rinsed and drained
1 can chicken broth
2 cans(4oz) diced green chilies
1 tsp salt
1 tsp oregano
1 tsp ground cumin
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream


cut chicken into bite size pieces and saute in oil with onion garlic powder. Add beans, broth, chilies, and seasonings. bring to a boil. reduce heat ans simmer uncovered for 30 min. remove from heat. stir in sour cream and cream.

I made this last night and it was divine!!! I baked bone in skin on chicken breasts with a little olive oil and salt and pepper until cooked through. Let it cool then removed skin and pulled chicken off the bone. I also poured a little of the chicken juices into the pot for additional flavor.

then I followed the recipe then kept it warm on low in my crock pot until dinner. I served it with corn chips and shredded jack and mozzarella cheese. Super yummy and perfect for the cold weather.

  1. You can even lower the fat content by using canned milk. I also like to dip crusty bread in it!
