Christmas dinner recipes

Okay, I have finally gotten ahold of all the yummy recipes from our wonderful Christmas dinner. What a fun night. Thank you to all who participated.


Artichoke Chicken

1 14 oz can artichoke hearts drained
3/4 cup grated Parmesan cheese
3/4 cup mayonnaise
dash of garlic powder

4 boneless skinless chicken breasts


combine artichokes, Parmesan cheese, mayo and garlic powder.
place chicken in a greased baking dish. spread artichoke sauce over chicken and bake uncovered @ 375 for 35 to 40 min. ***this recipe is best when you double the sauce recipe***




Sweet potatoes/apples with cranberries

2-medium to large sweet potatoes/yams( peeled and cut into bite sized pieces)
1- medium granny smith apple ( cored and diced into bite size pieces)
2-Tbs dried cranberries
1-2 tbs butter
1 - rounded tbs brown sugar
3/4 tsp salt
1/2 tsp cinnamon

Combine all ingredients into a microwave dish with a lid cook on full power for 8-10 min or until potatoes are tender.

I am sure you can make this in the oven as well. I will track down a cooking time and temp for that as well.




Armenian pilaf

1 cup Vermicelli noodles( uncooked)
1/4 cup butter( or a little more)
1 cup rice
1 small onion chopped
1 small can of sliced mushrooms

3-4 cups chicken broth
( you can use bouillon and water)

Break vermicelli into small 1 inch pieces. brown in margarine stirring constantly. add onion and rice and stir until rice is white. add mushrooms and broth
bring to a boil and cover and cook on med low and simmer for about 25 min. or until rice is tender




Raspberry butter

1/4 cup butter
1/4 cup seed free raspberry jam
pinch of salt


Beat with electric mixer until mixed (20 min) scrape bowl often



Fudge Brownies

2 sticks of room temperature butter
2 cups sugar
1/2 cup cocoa
2 tbs light Karo syrup
4 eggs ( slightly beaten)
2 cups all purpose flour

cream together butter, sugar, and Karo syrup
add eggs and mix until combined. ( don't over mix)
add dry ingredients and mix until blended.

In a greased 9x 13 pan spread mixture into pan and bake 350 for 30 min
cool completely and frost .

If doubling recipe use a jelly roll pan and bake for 30-35 min careful not to over bake.






Rich chocolate frosting

3 1/2 cups powdered sugar
2 tsp vanilla
3/4 cup room temp butter
1/ cup cocoa
1/4 cup milk

blend together and spread over cool brownies.



Here is a recipe from the ward Christmas party

Tortellini salad

3 or 4 (8oz) pkgs barilla three cheese tortellini
1 14 oz can quartered artichoke hearts
2 cans black olives sliced
3 Roma tomatoes diced
1 16 oz bottle walmart brand zesty Italian salad dressing
1 cup grated Parmesan cheese


cook pasta according to package directions. drain artichoke hearts and black olives. place in large bowl. add tomatoes. Drain and rinse pasta with cold water. let pasta dry a bit before adding to bowl. add pasta to bowl and blend with other ingredients. pour salad dressing and mix. add most of cheese and blend. before serving top salad with rest of cheese.
